THIS SALAD IS INSANELY DELICIOUS AND FULL OF FLAVOR AND TEXTURE.
Crispy spicy rice, cool crunchy veggies, and a tangy creamy dressing come together to make the perfect salad!
If you are someone who thinks salads are boring, you MUST try this one. It's got a wonderful texture, and flavor which will have you coming back for me.
Even better, it's very simple to prepare.
You will require cooked rice for this recipe so hopefully you have some leftovers in the fridge. We'll be mixing the cooked rice with some chili oil and then baking or air frying it. I am using Everiday Extra Virgin Olive Oil Garlic Chili Oil.
While the rice is cooking we'll assemble the salad and dressing. I would recommend adding a protein if you are looking to make this a complete meal. I loved poached prawns, edemame or grilled tempeh. Today I added poached prawns.
Feel free to make this salad your own by adding any other veg, herbs, or add-ins you like.

Crispy Rice Salad
A Vietnamese inspired salad that is just addictive
INGREDIENTS
- 2 cups cooked rice
- 2 Tbsp Everiday Foods Garlic Chili Oil or Miso Garlic Chili Oil (for less spicy)
- 2 Tbsp toasted sesame oil
- 1-inch piece of ginger, roughly chopped
- 3 Tbsp coconut aminos
- 2 Tbsp rice wine vinegar
- 1 Tbsp water
- 1 tsp Everiday Foods Garlic Chili Oil or Miso Garlic Chili Oil
- 1 Medjool date, deseeded
- salt to taste
- 4 cups salad greens of choice
- 1 Japanese cucumber halved and thinly sliced (about 1 cup) - I like to spoon out the seed but this is optional.
- 1 small to medium avocado, diced
- 2 spring onions, chopped
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup chopped peanuts
- Protein of choice (I like poached prawns or chicken for omnivores, and edamame or roasted tempeh for vegetarian/vegan)
INSTRUCTIONS
- Toss the rice in a bowl with the chili oil.
- Air fry in a single layer at 200℃/400℉ for 10-12 minutes, until golden and crisped. For Baking, you will want to bake in a preheated oven at the same temperature for approximately 20 minutes
- Blend all your ingredients together in a mini blender.
- Add your salad ingredients to a bowl.
- Add your crispy rice.
- Add your dressing and toss.
- Done!
