Viral Carrot Ribbon Salad

A LIGHT, CRUNCHY, & REFRESHING CARROTSALAD THAT'S AS BEAUTIFUL AS IT IS DELICIOUS.

If you’ve been scrolling through food videos lately, chances are you’ve seen the viral carrot ribbon salad that’s been called “skincare in a bowl.”

While it’s true that carrots are packed with beta carotene (which the body converts to vitamin A for healthy skin and eyes), the real reason to make this salad is because it’s simple, crunchy, and absolutely delicious.

The thin carrot ribbons soak up a bright, tangy-sesame dressing made with rice vinegar, fresh lime juice, and sesame oil. A splash of coconut aminos, a naturally gluten-free alternative to soy sauce made from fermented coconut sap, adds a touch of umami without being overpowering. I like to finish mine with toasted sesame seeds, and fresh cilantro.

This carrot ribbon salad is endlessly versatile. Serve it as:

  • A refreshing side to grilled fish, chicken, or tofu
  • A colorful starter for Asian-inspired meals
  • A light lunch when paired with avocado or edamame

Viral Carrot Ribbon Salad

A light, crunchy, and refreshing carrot ribbon salad that’s as beautiful as it is delicious.

PREPARATION TIME: 10 MIN COOKING TIME: 0 MIN TOTAL TIME: 10 MIN

INGREDIENTS

    • 6 Carrots
    • 1 Tbsp Sesame Oil
    • 2 Tbsp Rice Vinegar
    • 2 Tbsp coconut aminos
    • 2 Tbsp Fresh Lime Juice
    • 2 Tbsp Cilantro
    • 2 tsp toasted Sesame Seeds
    • 1 tsp chili flakes (optional)

INSTRUCTIONS

  1. Use a peeler to peel the carrots into ribbons and add them to a bowl or large jar.
  2. Next, add the sesame oil, rice vinegar, coconut aminos, and lime juice directly to the jar or bowl.
  3. Toss/shake until the carrots are fully coated in the dressing.

  4. Lastly ganish with the toasted sesame seeds, chili flakes, and cilantro.  Enjoy!
