Spinach and Strawberry Salad
Fresh, sweet, and tangy, the summer salad you’ll crave on repeat.
INGREDIENTS
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 teaspoon honey or maple syrup
- 1 garlic cove grated
- 2 tsp dijon mustard
- ½ tsp salt or to taste
- freshly ground black pepper to taste
- 150g / 5 oz fresh baby spinach
- 1 cup thinly sliced strawberries
- ⅓ cup thinly sliced red onion, soaked in cold water for ~ 10 min
- ½ cup toasted pecans, chopped
- 60g / 2 oz feta cheese, crumbled or avocado for dairy-free
- Salt and freshly ground black pepper
INSTRUCTIONS
- Add all your dressing ingredients into a jar. Cover tightly and shake well for 1 to 2 minutes.
- In a large bowl, place the spinach, strawberries, and soaked and drained red onion. Add some of the dressing and toss to combine.
- Add the pecans and feta or avocado and gently toss. Add more dressing, as desired. Season to taste with salt and pepper and serve.
