The Dirty Lemon Mocktail came from wanting something cold and refreshing at the end of the day that actually felt like a drink. Not sweet. Not fruity. Not sparkling water pretending to be a cocktail.
The combination of briny olives, fresh lemon, and lots of bubbles hits the spot. It’s salty, tart, crisp, and a little sophisticated. And somehow, four very simple ingredients make sparkling water feel entirely different.

A Better-for-You Mocktail That Isn't Loaded With Sugar
One of my biggest issues with many mocktails is that removing the alcohol often means adding a lot of juice, syrups, or sugar to make up for it.
You don't need any of that here.
Fresh lemon brings plenty of brightness and acidity, while olive brine adds that savory, salty quality that makes this drink feel more like a cocktail than flavored sparkling water.
It’s alcohol-free, naturally low in sugar, and made without syrups or artificial sweeteners. Just simple ingredients and lots of flavor.
And while I'm always going to enjoy a good glass of wine or cocktail when I want one, sometimes I want the ritual without the alcohol. This is perfect for those nights.
What Makes a Dirty Lemon Mocktail So Good?
Think of it as somewhere between lemon sparkling water and a dirty martini.
The olive brine is really the secret. It adds saltiness, savoriness, and just enough complexity to balance the sharp fresh lemon. The sparkling water keeps everything light and refreshing.
And unlike sweeter mocktails, this is a drink that works beautifully with food.
Ingredient Notes & Easy Swaps
- Sparkling Water: Use a plain, very cold sparkling water with plenty of carbonation. Mineral water also works beautifully if you like a little more flavor.
- Olive Brine: Use the liquid straight from your jar of olives. Start with 1 tablespoon if you want a more subtle drink and go up to 2 tablespoons if you like your drinks dirty. Different olive brines vary quite a bit in saltiness, so taste as you go.
- Fresh Lemon Juice: Fresh really matters here. You only need a tablespoon, but it gives the drink its bright, tart edge.
- Olives: Use whatever good olives you love. Green olives are my pick here, especially the ones sitting in that delicious salty brine you're already using for the drink.
Tips for the Best Dirty Lemon
Get everything cold. The colder the sparkling water, the better. You want this drink icy and crisp.
Start with less brine. You can always make your mocktail dirtier, but you can't take the brine back out.
Use plenty of ice. Fill the glass rather than adding just a few cubes. It makes the whole drink feel more like a proper cocktail.
Stir gently. Once the sparkling water goes in, you don't want to stir aggressively and lose all those bubbles.
The Perfect Ratio
This isn't really a drink that needs to be obsessively measured.
Fill your glass with ice and almost to the top with sparkling water. Add 1 tablespoon olive brine and 1 tablespoon fresh lemon juice, give it a gentle stir, and taste.
Want it dirtier? Add another tablespoon of olive brine.

How to Serve It
Serve your Dirty Lemon Mocktail immediately while it’s icy cold and bubbly, preferably in a beautiful glass with a few olives on a cocktail pick.
It's especially good with salty little snacks, cheese boards, hummus and dips, roasted nuts, Mediterranean food, or anything you'd normally want a crisp cocktail alongside.
It also makes a great pre-dinner drink when everyone else is having cocktails and you want something that still feels a little special.
Can You Make It Ahead?
Not really, and thankfully you don't need to.
Once the sparkling water is poured, you want to drink this right away so it stays bubbly. You can, however, chill your sparkling water and have your lemon juice and olives ready ahead of time. Then each drink takes less than a minute to assemble.
More Than Sparkling Water
I think this is what a good mocktail should be. It doesn't need to imitate alcohol perfectly or contain a dozen ingredients. It just needs to give you that same little ritual of pouring yourself something delicious at the end of the day.
Cold glass. Lots of ice. A few olives. Something salty, tart, and bubbly.
And maybe the realization that you've been throwing away perfectly good olive brine all these years.

- ice
- sparkling water
- 1–2 Tbsp olive brine
- 1 Tbsp fresh lemon juice
- Olives for garnish
INSTRUCTIONS
- Fill a glass with ice.
- Almost fill with chilled sparkling water
- Add in 1–2 tablespoons olive brine.
- Add 1 tablespoon fresh lemon juice.
- Stir gently
- Garnish with olives and serve immediately.
