  • Kewpie mayo: Japanese-style Kewpie mayo is especially rich and tangy. Regular mayonnaise works too.
  • Mini rice cakes: Their light, crunchy texture makes them an easy base for bite-sized appetizers. Use approximately 12, depending on how generously you top each one.
  • Seafood alternatives: Replace the salmon with sushi-grade tuna, chopped cooked shrimp, or well-drained canned tuna.
  • Plant-based option: Finely diced firm or extra-firm tofu makes a delicious alternative. Pat it dry first so the topping does not become watery.
  • To stretch the mixture: Fold in finely chopped avocado, cucumber, or both. Increase the chili sauce, mayo, and lime juice as needed to keep everything creamy and well seasoned.

INGREDIENTS

  • 100 g / 4 oz sushi-grade salmon, finely diced (sushi-grade tuna, canned tuna, or finely diced firm tofu also work great)
  • 1 1/2 Tbsp Everiday Red Chili Sauce, or another Everiday chili sauce or oil
  • 1 Tbsp Kewpie mayo
  • 2 tsp fresh lime juice
  • 1 tsp toasted sesame oil
  • Approximately 12 mini rice cakes (mine are from Everiday)
  • Chopped scallions, for garnish
  • Toasted sesame seeds, for garnish

INSTRUCTIONS

  1. Keep the salmon refrigerated while preparing the remaining ingredients.
  2. Add the diced salmon, Everiday Red Chili Sauce, Kewpie mayo, lime juice, and toasted sesame oil to a chilled bowl.
  3. Fold gently until the salmon is evenly coated. Taste and adjust with additional chili sauce or lime juice if desired.
  4. Arrange the mini rice cakes on a serving platter.
  5. Spoon the spicy salmon mixture onto the rice cakes immediately before serving.
  6. Garnish with chopped scallions and toasted sesame seeds. Serve right away while the rice cakes are crisp.

NOTES:

To feed a larger group, add finely diced avocado, cucumber, or both, then increase the sauce ingredients to taste.
