Cultured Butter

I'm a BIG advocate of good fats, and butter is one of my favorites.

If you do butter, make sure it is grass-fed so that you are reaping all the fantastic fat-soluble vitamin (A,D, E, & K), mineral, & fatty acid benefits with every bite. Now, if you want something extra special and delicious, you want cultured butter!

So what is cultured butter exactly?

It's fermented butter, which means it's a probiotic food.

Butter (Good fat) + Fermentation (Probiotics) = Gut superfood

Gut Superfood = Happy digestions, better gut lining, and better nutrient absorption

When the butter goes through the fermentation process, it also develops a bit of a tangy flavor, which is delicious. It also becomes silky smooth and creamy. Many bakers prefer to use cultured butter over regular butter for this reason.

So, we all know probiotics are beneficial for the gut because they are teeming with good bacteria, but why is butter good for our gut?

To clue you in butter contain a good amount of something called butyrate, which is a fatty acid that powers your gut lining. Your gut can make butyrate from fiber, but that's IF your gut is functioning optimally… Butyrate also has a powerful anti-inflammatory effect that everyone can benefit from. Butter fat also contains Glycosphingolipids, a type of fatty-acid that protects against gastrointestinal infections.

So next time you are buying your butter remember:

  • Grass-Fed is best

  • Cultured & grass-fed makes it even better

I know butter has developed a bad rap over the years but please don't fear it, embrace it and all it's healing properties!

my breakfast today was a generous amount of cultured butter on a piece of gluten-free sourdough bread from the The wholekitchen with a drizzle of raw honey. Paired it with some high enzyme papaya and some Tulsi tea to keep me calm for the day.
