just as good, if not better than the traditional version, and I think you’ll agree!⁠⁠

Tabbouleh (also spelled tabouli) is a super fresh herb salad, and honestly one of my favorites. One of the main ingredients though is bulgur (cracked wheat) and if you are gluten or grain-free, unfortunately, traditional tabbouleh wouldn’t work for you, BUT my version would!⁠⁠

I am all about nutritionally dense foods so you know I've packed this salad with all the same lovely flavors but made some swaps and superfood additions to make sure both your tastebuds and body are happy.⁠⁠

pro tip - You want to make sure you use a high-quality extra virgin olive oil when making this salad. When a dish is simple, each ingredient needs to shine! My personal choice of EVOO? I've been following meatless Monday since I was a kid and while it used to only be for cultural/religious reasons, today I continue to start my week with all the veggies but I also do it for the nutritional and environmental benefits. ⁠

As someone who follows an omnivore style of eating, it can be easy to fill my plates with different proteins and forget about all those lovely nutrient-dense veggies... And if I am being honest, they definitely take more time to prep and prepare, BUT they are worth the effort!⁠

Full of micro and macronutrients, along with tons of fiber, plants are an essential part of anyone's diet. Your gut loves them, and so should you.⁠

Today I'm cooking up warm and comforting Vegetable Korma.⁠
⁠
I use spices like cardamom, curry, and ginger along with cashews to make a velvety creamy sauce that has a lovely savory-sweet flavor.⁠

Happy Friday all!⁠

Wanted to share with you one of my favorite apps I’ve been loving making when having people over. ⁠
⁠
I love creating fusion dishes that bring together different tastes and textures. This combo isn't your typical combination but the flavors work magically together. ⁠
⁠
Takes just a few minutes of prep and is fresh, rich, and full of flavor!⁠
⁠
This one doesn’t have a name yet, so if you have a suggestion, drop it in the comments!! ⁠
⁠
Here is what you need:⁠
• Ri’s original grain-free crackers⁠
• cherry tomatoes⁠
• extra virgin olive oil⁠
• fresh basil⁠
• fresh stracciatella or burrata⁠
• flakes sea salt⁠
• Ri’s mala chili oil ⁠
⁠
Instructions:⁠
• in a pan, heat a little olive oil, and add your cherry tomatoes. Don't move them and allow them to blister. after about 1-2 minutes, give the pan a shake and allow the tomatoes to roll over so that the other side can blister. ⁠
⁠
• Once your tomatoes are soft and slightly charred, turn off the hear and sprinkle with a little chopped basil, and flaked salt and allow to rest for about 10-15 minutes.⁠
⁠
• Lay your crackers on a board or tray and top each with about 1 tbsp of resh stracciatella or burrata.⁠
⁠
• add 2 cherry tomatoes on top of each, then drizzle about 1/4 tsp of mala.⁠
⁠
• sprinkle more fresh basil and flakes sea salt and serve.⁠
⁠
* Note you can the tomatoes ahead of time but you want to assemble them right before serving.⁠
⁠
