Herbed Cottage Cheese with Roasted Cherry Tomato Dip

JUST AS BEAUTIFUL TO LOOK AT AS IT IS TO EAT!

The colors scream Christmas but this dip is a great anytime of year.

Super high in protein, you can feel good about enjoying and serving this up anytime.   This recipe is based on one from The Chutney Life, but I have made a few modifications and adjustments to make it a little healthier!  

Cottage Cheese is having its moment and honestly, I love it.  It's super high in protein, and fermented which means its easier to digest than other dairy products. 

We blend the cottage cheese with herbs to create a creamy base then top it off with some roasted spiced cherry tomatoes.  The combination is just perfect!

You can serve this up with you favorite gluten-free bread or crackers, my choice is obviously Everiday Foods!  The baguette, pita, or seed crackers (for low-carb) all work perfectly!

Herbed Cottage Cheese with Roasted Cherry Tomato Dip

A delicious simple high protein dip

PREPARATION TIME: 10 MIN COOKING TIME: 10 MIN TOTAL TIME: 20 MIN

INGREDIENTS

    Cottage Cheese Mixture
    • 15 oz / 200g cottage cheese

    • 1 birds-eye chili roughly chopped

    • 1/4 cup finely chopped cilantro

    • 1/2 cup packed basil

    • 3 cloves of garlic

    • 1/4 tsp salt or to taste

    Cherry Tomato Mixture
    • 2 Tbsp extra virgin olive oil

    • 5 cloves garlic

    • 20 oz / 550 g container of cherry tomatoes, halved (about 2.5 cups)

    • 2 tsp Everiday Foods garlic chili oil

    • 1/4 tsp salt

    • 5-6 leaves of fresh basil

    INSTRUCTIONS

    1. Blend all ingredients for the cottage cheese mixture and spread on a platter.
    2. In a skillet, on low heat add the olive oil.  Once hot add the garlic followed by the rest of the ingredients (you want everything to heat up and cook together).  Cook on low heat for about 8-10 minutes until the tomatoes start to release their juices and start to get soft and saucy.
    3. Pour the cherry tomato mixture on top of the cottage cheese mixture.
    4. Serve up with your favorite gluten-free bread or cracker!  I love Everiday Foods baguette toasted up as crostini or pita chips made from the pita bread.  For a low-carb version, the seed crackers work perfectly!!
